たいていの航空会社は現在ベジタリアン機内食を提供しています。リクエストするためにはあらかじめ航空会社に電話します。2回確認したほうがいいでしょう。

 国際記号（コード）がベジタリアン機内食の選択項目に使われています。4種のスペシャル・ベジタリアン機内食が一般に利用できるようになっています。私は航空会社や旅行代理店に記号でリクエストすることを勧めます。飛行便出発の24時間前にリクエストを確認し、空港で搭乗券を手にする時再び確認します。

 カナディアン航空の説明は次のようです。「旅客は宗教、健康、経済あるいは政治的理由、環境への配慮、人道的問題によりベジタリアン機内食をリクエストするでしょう。ベジタリアン機内食のさまざまなタイプが幾つかの区分に整理されました。

 こちらがその記号で食事内容によってさまざまな名前がありお客様が食べるものと食べないものの説明です。

VGML ：厳格な、純粋なベジタリアン食です。 乳製品を含んでおりません。ビーガンです。「ビーガンやピュアベジタリアンは肉やあらゆる肉由来品を食べません。魚、家禽やラードやゼラチンを含むものを食べません。酪農製品、卵とハチミツも食べません」。

VLML ：ラクト・オボ・ベジタリアン食、ベジタリアン・ラクトオボ食、西洋ベジタリアン食です。「ラクト・オボ・ベジタリアンは肉やあらゆる肉由来品を食べません。魚、家禽やラードやゼラチンを含むものを食べません。乳製品と卵は食べます。チーズは可能な限りレンネット不使用のベジタリアンタイプのものを使用します。

AVML：−アジアン・ベジタリアン食、アジア/インド・ベジタリアン食、イスラム教とヒンズー教のベジタリアン食です。「アジア/インド・ベジタリアン食は香辛料の効いたベジタリアン・コンビネーションです。一部乳製品を使用しています。

RVML：ロー・ベジタリアン食です。「生の野菜からなります。生の果物と野菜のコンビネーションです」。

カナディアン航空のベジタリアンに関する付加的な注釈です。「ベジタリアンによってはアルコールやカフェイン飲料、高度な加工食品、オーガニックではなく一般栽培で加工・栽培されたもの、あるいは特定の添加物や保存料摂取に制限があります」。

その他の食事記号

航空会社それぞれが別の記号と食事を提供しています。たとえばユナイティッド・エアラインズ（アメリカ）はIVML（インディアン・ベジタリアン）とKVML（コーシェル・ベジタリアン）があります。

その他のお知らせ

ある国際航空会社（エアーカナダ）は、「リクエストにお応えするため、飛行便出発の18時間前までにリクエストをお知らせください。コーシェルのリクエストは24時間前までにお願いいたします」。他の航空会社も似たような条件があるでしょう。

私はアメリカの航空会社（サウスウエスト）に電話してあらかじめベジタリアン・ミールをリクエストしたら、乳製品入りかそうでないかを尋ねてきたので乳製品が入っていない方を頼みました。

食事をもらったときミルク、ヨーグルトと果物も頂きました。

その状況を客室乗務員に説明したところこれしかないとのことでした。

ビーガンは飛行機に乗る際自分で食糧を持ち込むことをお薦めします。

Which airlines serve vegetarian meals?

 Most airlines now serve vegetarian meals. Call the airline ahead of time to make your request, and it is suggested that you confirm your meal twice.

There are international codes used for vegetarian meal selections. Four special vegetarian meals would appear to be generally available. I would recommend airline passengers request by code with their airline or travel agent, confirm their request 24 hours ahead of their flight departure and confirm again on obtaining their boarding pass at the airport.  

Interesting preamble (from Canadian Airlines): "Passengers may request vegetarian meals for religious, health, economic or political reasons, environmental considerations, humanitarian issues. The many different types of vegetarian meals have been consolidated into several categories."  

Here are the codes, the various names by which these meals are described and explanations of what is eaten/not eaten by customers who order them:  

VGML - Strict/Pure Vegetarian - Non-Dairy - Vegan. "Vegan or pure vegetarians eat no meat or meat products of any type - no fish, fowl or products with lard or gelatin. Dairy products, eggs and honey are not permitted."  

VLML - Lacto-Ovo Vegetarian - Vegetarian Lacto-Ovo - Western Vegetarian. "Lacto-Ovo Vegetarians eat no meat or meat products of any type - no fish, fowl or products with lard or gelatin. Diary products and eggs permitted. Cheese should be of the vegetarian type without rennet whenever possible."  

AVML - Asian Vegetarian - Asiatic/Indian Vegetarian - Moslem and Hindu Vegetarian. "Asiatic/Indian vegetarian meals are spicy vegetarian combinations which may include limited use of dairy products."  

RVML - Raw Vegetarian. "Raw vegetables - combinations of raw fruits and/or vegetables."  

An additional note on the characteristics of vegetarians (from Canadian Airlines): "Some vegetarians also incorporate restrictions on other foods and beverages such as alcohol/caffinated beverages, highly processed foods and foods that are grown or processed nonorganically or with certain additives or preservatives."

Other codes/meals:

Individual airlines may have other codes and meals. For example United Airlines (of the US) has IVML - Indian Vegetarian and KVML - Kosher Vegetarian.  

Other information:  

One international airline (Air Canada) states, "In order to meet your request, we would appreciate 18 hours notice prior to your flight departure, except Kosher which requires 24 hours." Other airlines may have similar requirements.

A note for vegans -
I called a US Airline company (Southwest) ahead of time and requested a vegetarian meal and they asked me dairy or non dairy and I said non dairy.
When i got the food i got a carton of milk, yogurt and fruit.
I explained the situation to the stewardess and she said that was all they had.
For vegans i would suggest packing yourself some food on planes.
